Ingredients

Makes about 24 cookies

Method

  1. Heat the oven to 350°F (175°C) and line two baking sheets with parchment.
  2. Whisk the flour, baking soda, salt, cinnamon, cardamom and clove together in a bowl.
  3. In a large bowl, whisk the melted butter, brown sugar and molasses until smooth. Let the mixture cool to lukewarm, then whisk in the egg.
  4. Stir in the dry ingredients until just combined. The dough is soft; if it's too sticky to roll, chill it for 10 minutes.
  5. Divide the dough into about 24 equal portions, roll each into a ball and coat in granulated sugar. Space them 2 inches apart on the sheets.
  6. Bake one sheet at a time for 9–11 minutes, until the edges are set and the tops crackle; the centers should be soft but not wet. Cool on the sheet for 5 minutes, then move to a rack.
